Wilton Benitez Gesha Green Beans 1kg
Experience the elegance and complexity of Geisha coffee, sourced from the renowned Granja Paraiso 92, nestled at 1900 meters above sea level. This rare and exquisite variety is meticulously processed to bring out its signature citrus and fruity notes.
The Process
The journey begins with a manual harvest, followed by careful selection by size and density. The coffee undergoes sterilization with ozonated water and ultraviolet light to ensure cleanliness. After pulping, the beans are fermented for 52 hours in an anaerobic bioreactor, with the addition of Saccharomyces cerevisiae var. diastaticus yeast, which enhances the coffee’s fruity, citrus, and subtly spicy character.
The beans are then washed at 75°C and gently dried at 38°C for 46 hours, ensuring a controlled and consistent process that preserves the delicate flavors.
Perfect for roasters and coffee enthusiasts seeking a truly extraordinary green coffee bean, Geisha from Granja Paraiso 92 offers a unique profile that showcases the mastery of Colombian coffee processing.
